Château d'Yquem

Sauternes

Château d'Yquem is the most famous winery in the world for sweet white wine. The wine is made from the grape varieties sémillon (80%) and sauvignon blanc (20%). Due to the specific (micro) climate of Sauternes the grapes undergo the so-called noble rot, caused by the fungus Botrytis cinerea in the morning dew of the river Ciron. This gives the wine a unique sweetness, but the production in terms of yield is exceptionally low. The moisture from the grapes is almost entirely lost, and every grape is picked manually at the time that the noble rot has developed sufficiently. Because of both effects the price of this wine is very high. In the classification of 1855, Sauternes is the only village outside of the Médoc that was incorporated. In this classification only Château d'Yquem has received the Premier Cru Supérior rating.
